Piri Piri Cheese Pav Bhaji

A classic Indian street food, with a Mishti twist!Serves:
Bhaji: 2 tbsp oil/butter, 1 tsp cumin seeds, 1 medium finely chopped onion, 2 tsp ginger-garlic paste, 2–3 finely chopped green chillies (optional), 3 medium tomatoes chopped/pureed, 1 tsp pav bhaji masala, ½ tsp red chilli powder, ½ tsp turmeric, 2 cups boiled and mashed mixed vegetables (potato, carrot, peas, cauliflower, capsicum), about ½ cup water, salt to taste, 1–1½ cups grated Mishti Piri Piri Cheese (divided), 2 tbsp chopped coriander and 1 tbsp butter for finishing. For the pav: 4–6 pav, 2 tbsp butter, optional pinch of pav bhaji masala and coriander. labreportnew-1
Method: Heat oil or butter and let the cumin splutter. Add onion and sauté until soft and lightly golden; add ginger-garlic paste and optional green chillies and sauté for a minute. Add tomatoes and cook until soft and the oil starts separating. Add pav bhaji masala, chilli powder, turmeric and salt. Add the mashed vegetables and water as required, mash further and simmer for 8–10 minutes. Stir in 1 cup grated Mishti Piri Piri Cheese and let it melt into the bhaji. Adjust seasoning and consistency, then finish with butter and coriander. Toast the pav on a tawa with butter and, if you like, a little pav bhaji masala. Serve the bhaji hot with the remaining Piri Piri Cheese on top, a little butter, coriander and optional chilli flakes, accompanied by buttery pav, chopped onions and lemon wedges.
