Natural Cheese vs Processed Cheese – Which Should You Choose?

If you're buying cheese for the first time, you've probably wondered about the difference between natural cheese and processed cheese. It's one of the questions I'm asked most often at Mishti Gourmet, and the answer is simpler than many people think.

People often ask me, "Leena, which is better—natural cheese or processed cheese?"

My answer is always the same.

Neither is better. They simply serve different purposes.

Natural cheese is made from milk using cultures, rennet and salt. Over time, it develops its own flavour, texture and character. That's why every natural cheese has its own personality. Parmesan is very different from Gouda, and Gouda is very different from Edam. Each has its own place depending on what you're cooking or serving.

Processed cheese begins with natural cheese and is made to provide a smoother texture, more consistent melting and a milder flavour. That's why it is often chosen for sandwiches, burgers and toasties where you want an even, creamy melt every time.

I don't believe one should replace the other.

If I'm putting together a cheeseboard, grating cheese over pasta or enjoying cheese for its own flavour, I'll almost always reach for a natural cheese.

If I'm making a quick grilled sandwich where smooth melting is important, a processed cheese can be a practical choice.
