Classic French Onion Soup with Gruyère

Rich, comforting and timeless – a French classic that celebrates the magic of slow cooking.

Introduction

Some recipes become classics because they are complicated. French Onion Soup becomes a classic because it proves the opposite.

With just a handful of everyday ingredients and a little patience, humble onions are transformed into a rich, deeply flavoured soup. Topped with toasted bread and beautifully melted Gruyère cheese, it becomes one of the world's most comforting meals.

The secret isn't expensive ingredients.

It's allowing the onions to caramelise slowly and choosing a cheese that melts beautifully while adding depth without overpowering the soup.

That is why Gruyère has remained the traditional choice for generations.

Ingredients

For the Soup

  • 5 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 1 tsp sugar (optional, helps caramelisation)
  • 2 tbsp plain flour
  • 1 litre vegetable stock
  • ½ cup dry white wine (optional)
  • 1 bay leaf
  • Fresh thyme (or ½ tsp dried thyme)
  • Salt and freshly ground black pepper

For Topping

  • 4 slices baguette or rustic bread
  • 200 g Mishti Gourmet Gruyère Cheese, grated
  • A little butter for toasting

Method

Step 1 – Caramelise the onions

Heat butter and olive oil in a heavy-bottomed pan.

Add the onions and cook over low to medium heat for 35–40 minutes, stirring occasionally.

The onions should become soft, golden brown and naturally sweet.

Avoid rushing this step, as it creates the characteristic flavour of the soup.


Step 2 – Build the soup

Add garlic and cook for one minute.

Sprinkle in the flour and stir well.

Pour in the wine (if using) and allow it to reduce slightly.

Add the vegetable stock, thyme and bay leaf.

Season with salt and pepper.

Simmer gently for about 20 minutes.

Remove the bay leaf before serving.


Step 3 – Prepare the bread

Lightly butter the bread slices and toast until crisp.

A crisp base prevents the bread from becoming soggy too quickly.


Step 4 – Assemble

Pour the hot soup into oven-safe bowls.

Place one slice of toasted bread on top.

Generously cover with grated Gruyère.

Grill or bake until the cheese melts completely and develops a beautiful golden crust.

Serve immediately.
