Caramelised Onion & Mature Cheddar Toast

Sweet, savoury and wonderfully cheesy — a simple toast where slowly caramelised onions meet the bold flavour of Mature Cheddar.
You can make this recipe with either Mature White Cheddar or Mature Red Cheddar. Both work beautifully, so choose according to your preference or what you have at hand.

Ingredients
- 4 slices of sourdough, multigrain or any good-quality bread
- 100–120 g Mature White Cheddar or Mature Red Cheddar, grated
- 2 medium onions, thinly sliced
- 1 tbsp butter
- 1 tsp oil
- A small pinch of salt
- Freshly ground black pepper
- ½ tsp dried thyme or a few fresh thyme leaves — optional
- ½ tsp sugar — optional
- A little butter for the bread
Method
1. Caramelise the onions
2. Prepare the bread
3. Assemble the toast
4. Melt the cheese
No oven? Make it as a closed sandwich in a covered pan or sandwich toaster instead.
5. Serve immediately
Leena's Tip
Don't hurry the onions. Slow cooking develops their natural sweetness, and that sweetness is what balances the sharper flavour of Mature Cheddar.
Try a Variation
Add thin slices of apple or pear for a fresh sweet contrast, a little mustard beneath the onions for extra sharpness, or some sautéed mushrooms for a more substantial toast.
